1 T dry yeast (regular or quick-rise)
1 to 2 cups water
5 cups flour
2.5 t sugar
2.5 t salt
1 t. olive oil
Dissolve yeast in 1 cup of warm water. Mix 2 cups of flour with the salt. Stir in the foamy yeast mixture. Add remaining flour gradually until dough is smooth, and not sticky. Coat with oil, cover, let rest 15-60 minutes. Split dough in half. Roll each to 15” rectangle [what size?] and roll up, pinch seams. Cover, let rise 30-60 minutes. Cook at 400 17-23 minutes till golden brown and hollow sounding.
