Common Mince Pies

Cook a piece of lean, fresh beef until very tender. When cold, chop it very fine and take 3 times the quantity of apples, peeled and chopped fine and mix with the beef; add raisins, allspice; salt sugar. Add molasses to suit the taste. A little ginger improves it. Small pieces of butter laid on top make it very tender. The Captain’s Lady Cookbook, 1900.
