Sautéed Greens

1 lb collard greens, kale, or Swiss chard
1 Tbsp bacon grease or veg oil
1 tsp salt

  1. Wash greens.
  2. Cut the stem out of the center of each leaf.
  3. Stack the leaves and roll up into cigar shape.
  4. Thinly slice.
  5. Heat bacon grease at medium high for 40 seconds.
  6. Stir in greens and salt.
  7. Sauté till bright green, and then a few minutes longer.

Some greens need to be steamed until tender. This recipe is good for tender greens.
