Cream of Chicken Condensed Soup
1 T. potato starch or cornstarch
1/2 c. broth
1/2 c. milk
salt
pepper
1/4 t. poultry seasoning
In a jar with a lid, combine potato starch or cornstarch, liquid, and seasonings. Shake till smooth. Pour into pan over medium heat and stir to thicken.
Substitutes for poultry seasoning: at least one-third sage mixed with all or one: parsley, thyme, rosemary, marjoram. Or use Italian seasoning plus a little sage.
Cream of Mushroom Condensed Soup
Same as Cream of Chicken, except melt 1/2 t. butter in the pan and sauté 1/4 c. mushrooms, diced. Use 1 c. milk instead of milk/broth, and add 1 t. dried onion flakes.
Cream of Celery Condensed Soup
Same as Cream of Mushroom, except use celery instead of mushrooms.
Cream of Tomato Condensed Soup
Same as Cream of Chicken, except use 1 c. tomato juice instead of milk/broth. Add spices: 1/4 t. each garlic powder, onion powder, basil, and oregano.
Cheddar Cheese Condensed Soup
Same as Cream of Chicken, except use 1 c. milk instead of milk/broth. Add 1/4 t. dry mustard. Remove from heat when thickened, and add 1/2 c. shredded cheddar cheese.
