2 eggs
1 T. milk or water
salt
pepper
1 T. butter
large flour tortilla
2 T. salsa
½ c. grated cheese
(optional: 2 T. refried beans and a sprinkle of hot sauce)
Whisk eggs, milk, and salt. Heat the butter in frying pan over medium heat. Add eggs; cook 2 to 3 minutes till no longer runny. Heat tortilla. Put egg along the middle. Top with salsa and grated cheese. Fold up end and sides.
