Crock Pot Peach Cobbler

4 to 5 cups peaches sliced
1-1/4 cups sugar, or part brown sugar
1 Tbsp cornstarch
1 tsp vanilla
1 cup milk (optional) (makes the cobbler more cakey, less biscuity)
1-1/4 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter in thin slices

Butter or oil the crock pot. Put in 4 to 5 cups of sliced peaches (frozen is fine). Mix in 1/4 cup of the sugar, plus the cornstarch and vanilla. In a bowl, mix the remaining 1 cup of sugar with the milk (if using), flour, baking powder, baking soda, and salt. Sprinkle (or pour) that over the peaches. Then put the butter slices on top. Cover and cook for 4 hours on low, or 2 to 3 hours on high.

For a crisper top crust, put a length of paper towel under the cover (hanging out the sides).

1/2 teaspoon nutmeg
1-1/2 tsp cinnamon
