3 cups cold cooked white rice (made from 1 cup raw)
2 eggs
2 tablespoons oil, divided
2 cloves garlic, minced
1 green onion finely chopped
1 teaspoon soy sauce
½ teaspoon sesame oil
¼ teaspoon salt, or to taste
1 pinch ground white pepper
Beat the eggs. Pour 1 T. oil into hot skillet or wok to coat. Scramble the egg. Remove and set aside. Add remaining 1 T. oil. Fry garlic till fragrant, add rice. Stir until heated through. Return egg to pan, add green onion pieces. Heat through. Add soy sauce, sesame oil, salt and pepper. Heat through.
Spam-Fried Rice (Yangzhou Fried Rice)
3 cups cold cooked rice (made from 1 cup raw)
3 tablespoons oil, divided
2 cloves garlic, minced
⅓ cup carrots, diced
⅓ cup peas
¼ cup shiitake mushrooms, finely chopped
1/8 cup water or chicken stock
½ teaspoon salt, divided
⅓ cup shrimp (cooked or raw)
⅓ cup Spam or ham, diced
2 eggs, beaten
¼ teaspoon pepper
1 green onion, finely chopped
Pour 1 T. oil into hot skillet. Sauté garlic briefly. Add carrots, peas, and mushrooms. Stir fry a minute, add water or stock and 1/4 t. salt. Let steam until most of liquid evaporates [is 1/8 cup really enough?] [should I pre-cook the carrots and mushrooms?]. Fry for a minute, until shrimp is cooked. Remove all from pan. Heat the 2 T. oil and scramble the eggs. Add the rice and heat through. Then add in the veg and spam mix and heat through. Add salt, pepper, and green onion pieces.
Pork-Fried Rice
2 tablespoons oyster sauce or stir-fry sauce
1 tablespoon light soy sauce
½ tablespoon dark soy sauce
⅛ teaspoon pepper
Mix above ingredients to make sauce.

1 cup minced pork (8 oz.)
1 small onion, diced
1 tablespoon garlic, minced
1 teaspoon ginger, minced
½ cup peas
½ cup carrot, diced
3 cups cold cooked white rice (made from 1 cup raw)
Green onions, finely chopped
Cook as for stir fries above, making the egg first using half the oil and removing from pan. Fry the pork in the other 1 T. oil. When done, add onion, garlic, and ginger. When onion becomes a little transparent, add the peas and carrots. Stir fry a minute, add the rice and egg, heat through. Pour the sauce over, toss and heat through. Add green onions and toss.
Chicken Stir Fry
1 small piece chicken breast, or comparable legs, thighs, etc. (about 7 oz.)
2 teaspoons cornstarch
pinch of salt
1 T. water
Cut the chicken into small cubes. Marinate in bowl with constarch, salt, and water, for 5 minutes.
2 tablespoon light soy sauce
1 tablespoon dark soy sauce
1 teaspoon sesame oil
⅛ teaspoon ground white pepper
Mix the soy sauces, sesame oil, and pepper in a small bowl.

Add 1 T. oil to hot skillet. Stir-fry chicken pieces till pale. Remove them. Heat the other 1 T. oil. Add garlic and onion. Cook till onion starts to brown. Add mushrooms, red pepper, and peas. Stir fry 1 minute. Add the rice and heat through. Return the chicken. Toss together half a minute. Stir in green onion pieces.
