1-1/2 cups mashed cooked
eggplant (1 medium)
1/4 cup diced onion
1 cup pancake mix
1 egg
1/4 cup milk
Combine ingredients and drop by tablespoon in electric skillet or in regular skillet using about 1/2 cup cooking oil. Cook until golden on both sides. Drain on paper towels. Serves 4.
