Gardenburgers

2 cups cooked short grain brown rice (made from 1 cup raw)
8 ounces finely chopped mushrooms (3 cups)
1/2 cup finely chopped onion
1 tablespoon butter
1 clove garlic, minced
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup instant or regular rolled oats
4 ounces cheese, grated (about 1 cup)

Heat the butter in a large skillet over medium high heat. Add mushrooms and onion and cover. Cook a minute, until the mushrooms start to release their liquid. Add the garlic and salt and cook, stirring, another 2-3 minutes until the mushrooms have reduced to about half their original volume.

Transfer to a large bowl and add oatmeal and rice. Stir in the cheese.

Cool to room temperature, then shape into burgers. Chill on waxed paper to firm up. Sauté them in butter or oil until crisp outside and warmed through. Good as a sandwich.
