Indonesian Chicken

3 lb. boneless raw chicken meat, cut in large cubes
2 t. vinegar
1⁄2 t. pepper
3 cloves garlic, crushed
1 c. water

3⁄4 c. peanut butter
1 c. milk
1 c. chicken stock
1-1⁄2 t. cayenne
2 t. soy sauce
2 t. sugar
1 bay leaf
3⁄4 t. salt

Oven 400. Thread chicken on skewers. (Is this necessary?) Dip in (brush with) mixture of vinegar, pepper, 1 clove garlic, and water.

Bake 10 to 15 minutes, till cooked.

Mix remaining ingredients in a saucepan. Cook over low heat until thick. Pour sauce over chicken and serve with rice. Serves 6 to 8.
