Like Domino’s Thin Crust
This is a baking powder crust, instead of yeast. Very quick and easy.
Heat oven to 450.
Make the crust: Combine these ingredients in a large bowl.
1-1/4 cups flour
1/2 tsp salt
1/2 tsp baking powder
2 tsp olive oil
1 tsp light corn syrup
1/2 cup water
Shape into a ball and roll paper thin on parchment paper or floured surface. Circle or rectangle. Size?
Chicago-Style Deep Dish Pizza
Use greased cast iron skillet or 9″ round deep-dish baking pan. Heat oven to 425.
Crust for Deep Dish Pizza
Combine in a small bowl:
3/4 cup warm water (110°)
1-1/2 tsp sugar
1 packet (2-1/4 tsp) active dry yeast
Let sit 10 minutes, till foamy.
In large bowl, mix:
1-3/4 cups all-purpose flour
1/4 cup yellow cornmeal
1/2 tsp salt
Add the yeast mixture, plus:
2 Tbsp olive oil
2 Tbsp soft butter
Mix till it forms a dough.
Knead on a floured surface till smooth (5 to 7 minutes).
Form into a ball and put in a greased bowl, turning to coat. Cover with damp kitchen towel and let rise in a warm place until double (1 hour?).
Sauce for Deep-Dish Pizza
1 Tbsp olive oil
2 cloves garlic, minced
1 can (15 oz) crushed tomatoes
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp sugar
Salt to taste
Pepper to taste
Make the sauce: Heat the oil over medium heat. Briefly sauté the garlic, then add the tomatoes and remaining ingredients. Simmer until thick (15 to 20 minutes).
Pizza Toppings
Roll out the dough to a 12-inch circle and fit it into the skillet or baking pan. The mozzarella goes on first, then the toppings, then the sauce, then the parmesan is sprinkled on top:
2 cups shredded mozzarella
Toppings (optional):
sautéed mushrooms
bell peppers
onions
Italian sausage (cooked)
pepperoni
olives (drained well)
1/2 cup grated Parmesan
Bake until the crust is golden and the sauce is bubbly (25 to 30 minutes).
