1 T. butter
2 small flour tortillas
½ tomato, seeded and chopped
¼ avocado, thinly sliced
(optional: 2 chopped olives)
¼ c. shredded cheese

Butter one side of each tortilla. On unbuttered side, put ingredients up to 1” from edge. Top with butter-side-up tortilla and slide into hot frying pan. Cook till light brown and flip to cook other side.
