1 lb collard greens, kale, or Swiss chard
1 Tbsp bacon grease or veg oil
1 tsp salt
- Wash greens.
- Cut the stem out of the center of each leaf.
- Stack the leaves and roll up into cigar shape.
- Thinly slice.
- Heat bacon grease at medium high for 40 seconds.
- Stir in greens and salt.
- Sauté till bright green, and then a few minutes longer.
Some greens need to be steamed until tender. This recipe is good for tender greens.
