1 pound angel hair pasta
1 t. salt
2 t. toasted sesame oil
2 grated carrots
3 finely chopped green onions
¼ c. finely chopped cilantro
1 c. finely chopped celery
1 T. minced gingerroot
Dressing:
1 T. peanut butter
2 T. soy sauce
¼ t. crushed red pepper flakes
2 T. cider vinegar
Boil noodles in salted water till tender and drain; run cold water over. Toss in a bowl with 2 t. sesame oil. Gently mix in the rest of salad ingredients. Make dressing and stir into the salad. Keep cold till serving. 8 servings.
