4 c. strawberries
2 T. sugar
2 c. flour
1 t. salt
4 t. baking powder
2 T. sugar
¾ stick butter (6 T.)
¾ c. milk
soft butter
whipped cream
Rinse and hull the strawberries. Cut in half and sprinkle with sugar. Sift flour, salt, baking powder, and sugar. Cut the butter into it till crumbly. Stir in the milk. Form into a ball, flatten to a circle to fit a buttered 8” pan. 25 minutes at 400. Cool 5 minutes. Flip onto a plate, then right side up onto a serving plate. Cut with bread knife to make 2 layers. Gently spread the warm bottom layer with soft butter. Spoon half the strawberries on. Set the top on. Top with rest of berries. Serve with whipped cream.
