The Louisville Hot Brown Sandwich

1/4 cup butter
1/4 cup flour
2 cups milk
3 tablespoons grated Parmesan cheese [or 1/4 c. cheddar and 1/4 c. parmesan?]
1/2 beaten egg at room temperature
1/2 ounce whipped cream (optional)
Salt and pepper to taste

Make a white sauce, stirring for for 5 to 10 minutes to remove any. Whisk in the cheese, and let the mixture cool slightly. Add the egg to thicken the sauce, but do not allow the sauce to boil or it will curdle. Remove from heat, and fold in whipped cream if desired. Season with salt and pepper. Set aside and keep warm.

6 slices of white bread, toasted
2-1/2 to 3 pounds sliced roast turkey
Additional Parmesan cheese for topping
12 strips of bacon, cooked crisp and drained

Preheat broiler. For each Hot Brown, place two slices of toast on a metal or flameproof dish. Cover the toast with a liberal amount of turkey. Pour a generous amount of sauce over the turkey and the toast. Sprinkle with additional grated Parmesan cheese. Place the entire dish under the broiler until the sauce is speckled brown and bubbly. Remove from broiler, cross two pieces of bacon over the top, and serve immediately. Yield: 3 sandwiches.
